Nicacio Moreano 的 Eucalipto Pata 批次來自秘魯庫斯科 Incahuasi Valley。Datura 的 Loïc Perneau 將這個故事說得很清楚:SL9 對許多飲者來說像是新品種,但其實並不新。它過去因強烈花香、清晰度與優雅結構,長期在秘魯被稱為「印加藝妓」。近年多次基因分析改寫了這個故事:SL9 與藝妓並無明顯親緣關係,反而與稀有的肯亞 SL-09 譜系相近,像是一支幾乎消失的東非品種在秘魯高山中被重新看見。

完熟果實先經浮選去除瑕疵,再去果皮後置於乾淨發酵槽中,以自身果膠進行無水發酵。高海拔低溫環境讓發酵保持穩定,通常約 24-36 小時。水洗後,帶殼豆於棚架乾燥,並每日多次翻動至含水率穩定。

Nicacio Moreano's Eucalipto Pata lot comes from Peru's Incahuasi Valley in Cusco, where SL9 has become one of the most compelling rare varieties in the Andes. Datura's Loïc Perneau frames the story neatly: SL9 feels new to many drinkers, but it is not new at all. For years, it was known locally as Inca Gesha because of its intensely floral profile, clarity, and elegant cup structure. Several genetic analyses have since changed that story: SL9 has no meaningful genetic relation to Gesha. Instead, it appears connected to the rare Kenyan SL-09 lineage, an almost-lost East African selection that quietly survived in the Peruvian Andes.

Fully ripened cherries are floated to remove defects, then pulped into clean fermentation tanks and fermented dry in their own mucilage. The cool high-altitude climate keeps the fermentation stable, typically 24-36 hours. After washing, the parchment dries on raised beds and is turned several times a day until it reaches stable moisture.
