El Roble 位於哥倫比亞烏伊拉省皮塔利托,莊園最高點海拔達 1,800m。莊園開始生產精品咖啡,是為了紀念至今仍佇立於園區內的幾棵老橡樹。

第三代咖啡農 Dionel Chilito 在鄰近生產者的指導下,逐步改善栽培與處理方式,並更換品種以尋找傳統作法之外的可能性。莊園衛生管理嚴格,水洗用水亦極為潔淨。Dionel 與妻子及兩個女兒一同生活、工作於園中。

果實經精選後浮選去除瑕疵,去果皮後進行 36 小時水洗發酵,再於覆蓋塑膠頂棚的乾燥屋中乾燥 17 天,遮蔽陽光與雨水以穩定乾燥節奏。

El Roble is located in Pitalito, Huila, with the highest point of the farm reaching 1,800 meters above sea level. The estate began producing specialty-grade coffee as a tribute to several old oak trees that still stand on the property today.

Dionel Chilito is a third-generation coffee farmer. With guidance from a nearby producer, he began improving cultivation and processing practices and changed the varieties he grows in order to explore alternatives to traditional plantings. Hygiene management at the estate is rigorous, and the water used for washed processing is exceptionally clean. Dionel lives and works on the farm with his wife and two daughters.

Cherries are selectively harvested, then floated to remove defects before fermentation. After depulping, the coffee undergoes 36 hours of wet fermentation, then dries for 17 days in a drying house with a plastic roof that protects the parchment from direct sunlight and rain.
