Roberto Carlos Palomino Flores 二十五歲,剛取得農業技術員資格,於庫斯科海拔 2,200m的 La Rinconada 莊園耕作。他與鄰近農戶分享技術,並同時建立育苗事業 — 這次的收成可見一個世代的轉變。
手工精選成熟果實,浮選去除瑕疵後於果皮內發酵 18 小時,去果皮後進行 36 小時無水二次發酵直至膠質完全分離。其後於遮蔭棚架上乾燥 20 天,含水率收至 10.5%。高海拔藝妓的花果調性在此清晰呈現:前段覆盆子與金銀花,中段薰衣草與玫瑰,尾韻收於富士蘋果與櫻桃。
Roberto Carlos Palomino Flores is twenty-five, a recently trained agricultural technician working La Rinconada at 2,200 meters in Cusco. He shares technique with neighboring farmers and is building a nursery operation alongside his own production — a generational shift visible in this year's harvest.
Selective hand-picking of ripe cherries only. After floating off defects, an 18-hour fermentation in cherry, then depulped and a second 36-hour dry fermentation until mucilage separates cleanly. Twenty days of shaded raised-bed drying brings parchment to 10.5% moisture. The cup reads as floral-fruit Gesha at altitude: raspberry and honeysuckle leading, lavender and rose through the body, Fuji apple and cherry in the finish.
