Erick Bravo 於哥倫比亞烏伊拉省聖奧古斯丁地區耕作,馬格達萊納河谷上行的涼風延緩果實成熟,使杯中表現具有少見的均勻度。他曾於 Cup of Excellence 與 Huila Mágico 競賽中取得名次 — 是一位踏實的農人而非競賽常勝者,園中種有數千棵 Castillo、Catimore 與粉紅波旁。

果實經浮選後,於果皮內發酵 48 小時,去果皮後再進行 36 小時無水發酵,最後於溫室中棚架乾燥 15-20 天。粉紅波旁的特性在此處理法下細緻而結構分明:前段奇異果與荔枝,中段熱帶核果,尾韻收於蔗糖般的甜感。

Erick Bravo farms across San Agustín in Colombia's Huila department, where cool air drifting up the Magdalena River basin slows cherry maturation and gives the cup unusual evenness. He has placed in Cup of Excellence and Huila Mágico — a working farmer rather than a competition specialist, with thousands of trees across Castillo, Catimore, and Pink Bourbon plots.

Cherries are floated, then fermented in cherry for 48 hours before depulping. A second 36-hour dry fermentation follows, after which the parchment is greenhouse-dried for 15-20 days. The result is a Pink Bourbon expression that reads delicate and firm at once: kiwi and lychee in the front, tropical stone fruit through the middle, cane sugar finish.
